Batch Cook Slow Cooker Corn Chowder Recipe


Lightly spiced cream with a delicious tang of salty bacon and tender sweetcorn.  This corn chowder recipe makes a deliciously different soup for lunches.


Ingredients and Tools:
Bacon £3.49
Onions 50p
Flour 10p
Garlic 13p
Sweetcorn 85p
Paprika 25p
Cream 89p
Chives
Thyme

Start by dicing the onions.  A food processor makes this so much quicker than doing it by hand.


Then mince the garlic, again a food processor makes light work of this job.

Fry the onions and garlic until soft.

Add them to the slow cooker.


Dice the bacon and fry that in the same pan - no need to make more washing up.


While the bacon is frying add the frozen sweetcorn to the slow cooker.


Then a small handful of flour to thicken the soup.


Half a tub of paprika.


And some dice herbs, I'm using thyme an chives from the garden.


Once the bacon is nice and crispy add it to the slow cooker too.


Give it a good stir and leave it to cook for a few hours.  You can leave it all day or overnight if that's convenient, but as the bacon is already fully cooked it's just a matter of letting the flavours combine in the slow cooker. 


At the end of the cooking time add the cream.


The soup is very thick so I "water" it down by adding milk before re-heating.  You could use water if you prefer.  You could also add the water or milk before freezing but that will take up more space in your freezer and I'm always short on space in mine.
