Chocolate D for Daddy Cake Recipe with Pink Icing


A super easy chocolate cake recipe perfect for kids to make.  This one is covered in oh so girly pink icing because that's every daddy's dream cake isn't it?

Little Miss is very excited about her birthday, which is months and months away!!  Thankfully her Daddy's birthday is much closer so I told her she could have some of the things she's excited about for her Daddy's birthday.  She fixated on the cake and quickly designed this pink monstrosity, right down to the pink stars.  It wasn't what I had in mind for a 41 year old guy but it made his little girl very happy.


Ingredients and Tools:

For the Cake:
225g Self Raising Flour 8p
225g Castar Sugar 29p
225g Buter 63p
4 Eggs 31p
1 teaspoon baking powder 5p
2 - 3 Tablespoons Cocoa Powder 20p

For the Icing:
400g Icing Sugar 69p
200g Buter -
Chocolate Stars 99p
Food Colouring 5p

Total = £3.29


I have two little helpers today.


We started by weighing out the flour, butter and sugar.

I added the baking powder.


Then my helpers added the cocoa powder, the amount isn't crucial.

Meanwhile I broke the eggs and added them to the mixture.

We popped the mixing bowl into my trusty Kenwood mixer and mixed away.

I left the small people to watch the mixer (they were fascinated) while I thoroughly greased the cake tin with some butter.


Then they "helped" to pour the mixture into the cake tin.


I popped in in the oven at gas mark 4 for about 30 minutes.


Meanwhile my helpers addressed the vital job of spoon licking. 


Once the cake was cool I made the icing by mixing the icing sugar and butter, again using my Kenwood mixer to get it super fluffy.  

I had intended to buy some pink food colouring especially for the occasion but my usual supermarket was out of stock and being socially responsible I didn't try a different one.  I did think I had some sugar paste colouring but as it turned out this wasn't the case.  Little Miss was very upset when I suggested that pink icing may not be happening.  So this icing is actually colouring with sugar paste dusting.  Necessity is the mother of invention and all that.  If you decide to make this cake for yourself I do recommend opting for actual food colouring instead.

I spread my icing over the cake and smoothed it down before sprinkling some white chocolate stars on top for decoration.


I popped the cake in the fridge overnight to set the icing before serving the next day.

I also couldn't get birthday cake candles and so improvised with these too.

Chocolate Cake Recipe


This recipe is based on my Purple Velvet Cake Recipe.

Ingredients:
4 Eggs £0.31
1 Teaspoon Baking Powder £0.05
225g Self Raising Flour £0.08
225g Caster Sugar £0.29
425g Butter (225g for cake 200g for frosting) £0.63
Cocoa Powder £0.20
400g Icing Sugar £0.69
Purple Food Colouring £0.05
Sprinkles £0.85

Total £3.15.  This cake easily fed 30 guests with leftovers.


We started by weighing out the flour, sugar and butter into a big mixing bowl with the eggs and baking powder.  Little Miss added the cocoa powder.  I'd say a few tablespoons.


She was very pleased with herself.


And obviously took charge of the spoon licking.


Into the mixer it went . . .


And it came out looking like this.


I poured it into my greased cake tin and popped it in the oven at gas mark 4 for 30 minutes.


Meanwhile I made the frosting (Little Miss had got distracted by this point).  Butter and icing sugar into the mixing bowl.


Plus some food colouring and a good mix.


I iced the cooled cake and here's what we got.

I did put some chocolate sprinkles on the top but totally neglected to get a photo of the finished product.



Coffee and Walnut Cake Recipe


This is a wonderfully moist cake with the perfect texture, crumbly and dense but not too heavy.  It's definitely flavoursome - too flavoursome for me in fact, I'm not a fan of coffee cake.  Hubster is a fan, a huge fan, this cake was made for his birthday.  Thankfully he loves it, he's eaten most of it all to himself as it seems our Smalls agree with me.  


Ingredients:
8 Eggs
2 Teaspoons Baking Powder
450g Self Raising Flour
450g Golden Caster Sugar
850g Butter
800g Icing Sugar
200g Walnuts
5 Dessert Spoons Coffee Powder

Tools and Materials:

Method:


Get the cake tin laid out and really well greased with non stick cooking spray.


Mix the eggs, flour, butter, sugar, baking powder and 4 spoon fulls of the coffee.


Get it well mixed.


Then pour half of the mixture into the prepared cake tin.


Cook at 180 degrees centigrade for 30 minutes.

Turn the cake out to cool.


Re-arrange the cake tin and re-coat it with non stick cooking spray.

Pour the other half of the mixture into the cake tin.


Cook at 180 degrees centigrade for 30 minutes.

Turn the cake out to cool.


Here's my cooled cakes ready for decorating.


Next mix 800g icing sugar and 400g of butter with a dessert spoon full of coffee.


Beat well.


And spread evenly over the cake.


Crush the walnuts and sprinkle them over the top of the cake.


Like so.



Purple Velvet Cake Recipe


Delicious, moist sponge cake that just happens to be bright purple.  Covered with sweet and sticky buttercream frosting - also purple.  


Ingredients:
4 Eggs
1 Teaspoon Baking Powder
225g Self Raising Flour
225g Caster Sugar
425g Butter (225g for cake 200g for frosting)
400g Icing Sugar
Purple Food Colouring
Vanilla Flavouring



Grease and line two 10" cake tins.


Weigh out the flour, sugar, butter, eggs, baking powder, food colouring and flavouring.


Give it a good mix.


Divide the mixture evenly into the two cake tins.

Bake at 180 degrees centigrade for 40 minutes.


Leave them to cool on a wire rack.


Weight out 400g Icing Sugar and 200g Butter.  Add some food colouring.


Beat thoroughly.


Cover the top of one cake in frosting and place the second cake directly on top of the first.


Cover the top and sides with frosting.

Set the frosting by putting the cake in the fridge.
