Creamy Chicken Curry - Budget Batch Cook Freezer Recipe


A mild creamy chicken curry that's packed full of vegetables.  Better yet, both my kids cleared their plates then asked for seconds and ate that too!!


Tools and Ingredients:
2kg Boneless Chicken £7.78
Onions 50p
Peppers £1.29
Sweetcorn 69p
Chopped Tomatoes 84p
Passata (or Tomato Puree) 32p
Ginger 25p
Garlic 16p
Ground Almonds £1.39
Curry Powder 40p
Paprika 23p
Yogurt 45p
Cream 89p

Total = £15.19
Makes 27 portions = 56p per serving

Start by mincing the garlic.


Then peel and chop half of the ginger as finely as you can.


Then chop the onions.


Throw them all in a deep frying pan and fry them until they're soft.

Then throw them all into your slow cooker.


Chop the peppers and add them to the slow cooker.


Dice the chicken and throw that on top.


Next add the ground almonds.


Half a tub of curry powder.


Half a tub of paprika.


All of the passata - I'd normally use tomato puree instead but the supermarket had sold out so I made do.


Add the sweetcorn.


Then the tins of chopped tomatoes.


Finally add the tub of yoghurt.


Give it a stir and pop the lid on, leave it to cook on low for at least 5 hours or turn it up to high if you're in a rush.  Make sure that the chicken is cooked through before serving.

Little Miss requested simple boiled rice.

Spicy Turkey Meatballs - Healthy Batch Cook Recipe


This spicy meatball recipe is most certainly kid approved.  My two devoured their portions, demanded seconds, devoured that too then asked if we could have them again the next day!!  They are a little more time consuming to prepare than some of my other recipes but for that result it's so worth it.


Ingredients and Tools:

For the Meatballs:
2 kg Turkey Mince £7.56
Half a loaf of Old Bread
450g Cheese £2
4 Eggs 31p

For the spicy Sauce:
Chopped Tomatoes 84p
Cream 89p
Lemon Juice 10p
Curry Powder 22p
Paprika 23p
Cumin 23p

Total = £12.38
Makes 18 portions = 69p per serving

I'm starting with the sauce, add the chopped tomatoes to a large pan.


Then the curry powder, about 1/4 of a tub.


About half a jar of paprika.


And some cumin - about a quarter of a jar.


Then add a good squirt of lemon juice.


Give it a stir and bring it to the boil.


Then take it off the heat and stir in the cream.  

Taste and adjust the spices if necessary.


Instead of buying breadcrumbs save old bread and crusts and whizz them in a food processor. 


Put the mince in a big bowl.


Add the breadcrumbs and the eggs.


Grate about half a block of cheese and add that too.


Mix it all up with your hands - this photo is taken after I'd made about half of the meatballs.


Use your hands to form little balls of the mixture.  You can use an ice cream scoop to get the size consistent but I find it easier to use the palms of my hands.


Pop the meatballs in the oven on gas mark 5 for about 45 minutes.

Check they are cooked through before serving smothered in spicy sauce.


Little Miss asked for this with spaghetti.  It would also work well with other types of pasta or a jacket potato, or what about a sandwich!?

Chicken Tikka Masala - Slow Cooker Batch Cook Recipe


Chicken Tikka Masala is one of my favourite takeaway dishes.  Since I started making my own I haven't ordered it once, this version is cheaper, healthier and tastier than most restaurants.

Ingredients and Tools:


2kg Chicken Breast £7.00
Natural Yogurt 45p
Cream 89p
Ground Almonds £1.39
Coriander 48p
Paprika 25p
Curry Powder 40p
1kg Onions 50p
Peppers £1.19
Garlic 16p
Chillies 47p
Ginger 25p
Tomato Puree 31p
Cumin 25p

Total = £13.99
Makes 21 servings = 67p per portion 


Food purchased from Aldi

Start by chopping the chicken into bite sized pieces.

Pop it in a container with a lid for marinading, seen as it will be ending up in the slow cooker I'm using that and saving on the washing up.


Finely dice the garlic.


And the chilies.


Add them to the chicken along with the yoghurt.


Then the spices, half a jar of paprika


half a tub of curry powder


half a jar of cumin


and half a jar of ground ginger.

I usually use fresh ginger and add it with the chillies and garlic but Aldi didn't have any in stock so I'm substituting ground ginger instead.  I do think the fresh tastes better but it's not enough of a difference to change my plans.


Give it all a good mix and pop the whole thing in the fridge for at least a few hours, overnight is best if you can.


When you're ready to make the chicken tikka masala chop the onions.


And fry them until they're soft.  

Add them to the slow cooker.


Chop the peppers, add them too.


Chop the coriander.


Then add the ground almonds to the slow cooker.


Top with the tomato puree.

Give it a stir and leave it to cook on low for 5 - 6 hours.


At the end of the cooking time stir in the pot of cream.


Portion into microwave and freezer proof tubs.  Each one of these serves three people.


We like it with boiled rice, t's also great with chips or over a jacket potato.
