Batch Cook Creamy Pumpkin Soup Recipe


I love decorating my house with pumpkins for Halloween.  And of course we make pumpkin soup out of the pumpkins - waste not want not and all that.

Now to be fair jack o lantern pumpkins are not by any stretch of the imagination the best pumpkins for flavour.  If you're not going to be using the pumpkin skin for decorating then choose smaller pumpkins or butternut squash for a more flavoursome soup.


Ingredients and Tools:
Pumpkins £3.96
Onions 50p
Garlic 12p
Vegetable Stock 12p
Cream £1.90

Total = £7.55 / 33 portions = 23p per portion

I start by roughly chopping the onions.  This soup will be blended later so there's no need to spend time dicing the onions.


The garlic is diced.


And both are fried until soft - I should have just used my big pan instead of the frying pan as I'll be using the big pan for the rest of the soup.


An ice cream scoop helps to scoop out the pumpkins innards.


Separate the seeds and save them for later,


Dice up the pumpkin flesh.


And boil it along with the onions and garlic.

Add the stock,


Once it's well boiled add the cream.


Blend and portion into freezer tubs.


The kids love this pumpkin soup.  It's too bland for my taste so I like it with some nutmeg sprinkled on top.  You could also add cumin or ginger.  I think next year I'll make this pumpkin soup recipe with added bacon.

Healthy Chicken Caesar Salad - Meal Prep Recipe


My Chicken Caesar Salad Recipe was utterly divine but it is a serious calorie fest, certainly not a healthy salad.  I've changed the recipe and made a healthy version with more vegetables and a lot less calories.  I won't claim that it tastes as good but the flavours are there and this one come's without a side order of guilt.


Tools and Ingredients:
Lettuce 49p
Peppers £1.15
Sweetcorn 37p
Cucumber 49p
Tomatoes 69p
Chicken £3.38
Light Mayonnaise 30p
Lemon Juice 17p
Dijon Mustard 18p
Anchovies £1.06
Garlic Powder 23p
New Potatoes £1.00

Total = £9.51
Makes 10 generous portions = 95p per portion

Start by chopping the new potatoes into bite sized chunks and putting them on to boil.


Shred the lettuce.


Dice the cucumber.


Chop the peppers.


And dice the tomatoes.


Mix all the vegetables together along with the sweetcorn.


To make the delicious dressing mince the anchovies.


Add about half a bottle of lemon juice.


And about half a jar of Dijon mustard.


Then add about half a bottle of mayonnaise.  To keep the calorie count low I'm using low fat mayonnaise.


Finally add half a jar of garlic granuales.


Give it all a good stir.


And mix in the chicken breast pieces.


Drain the potatoes.


Store the salad, potatoes and Chicken Caesar separately to keep them fresh for longer.  They should last for about 5 days in the fridge in sealed containers.

Pepperoni and Mushroom Pasta Bake - Batch Cook Freezer Recipe


In an effort to get my Little Miss to eat more vegetables I've been adapting some of her favourite junk food recipes into healthier versions.  My Hamburger Pasta Sauce Recipe went down a treat and it inspired me to make a pepperoni pizza version which was an even bigger success!!  #momwin!!


Tools and Ingredients:
1kg Pepperoni £6.80
1kg Onions 69p
750g Mushrooms £1.40
3 Tins Chopped Tomatoes 84p
1 Bulb Garlic 16p
1 Tube Tomato Puree 31p

Total = £10.20
Makes 18 portions = 57p per portion

Start by mincing the garlic.


And dicing the onions.

Pop them in the pan to fry until soft.


Chop the mushrooms.


Once the onions and garlic are soft add the mushrooms to the pan and fry them too.


Next add the chopped tomatoes.


And the tomato puree.


Chop up the pepperoni and throw that in the pan too.

Bring the mixture to the boil and little it simmer for about half an hour stirring occasionally.


Pop the sauce into an over proof dish.


Add dried pasta.


Then add about as much water as you added sauce.


Give it a good stir and pop it in the oven at about gas mark 5 200 degrees for about an hour.


Once the pasta is pretty much cooked top with a generous payer of cheese and cook for another 10 - 15 minutes to melt the cheese.
