Chicken Teriyaki - Batch Cook Slow Cooker Recipe


This is a quick and easy recipe that's jam packed full of flavour.


Ingredients and Tools:
1kg Boneless Chicken £5.38
1kg Onions 57p
Fresh Ginger 55p
Garlic 16p
Soy Sauce 45p
Honey 99p
Cider Vinegar 49p
Cornflour 15p

Total = £8.74
Makes 18 portions = 49p per serving

Start by chopping up the onions.


The dice the garlic.


Fry them both together until they're soft then throw them in the slow cooker.


Dice the ginger as finely as you can and chuck that into the slow cooker too.


Next dice the chicken and sling that on top.


Then add about half a bottle of cider vinegar.


The full bottle of soy sauce.


And the full jar of honey.


Sprinkle a a few tablespoons of cornflour on top to thicken the sauce.


Give it a stir and cook on low for about 6 - 8 hours.  If you're in a rush you can cook it on high for 4 - 5 hours, just check that the chicken is fully cooked before serving.

African Chicken Stew - Batch Cook Slow Cooker Recipe


This is a delicious healthy stew that's packed full of flavoursome veggies.  


Ingredients and Tools:
2 kg Boneless Chicken £8.88
1 kg Onions 57p
1 kg Sweet Potatoes 99p
750g Peppers £1.19
Chillies 47p
Ginger 55p
Garlic 16p
Coriander - from garden
Chopped Tomatoes 84p
Chicken Stock 12p
Peanut Butter 85p
Cayenne Pepper 25p
Cumin 25p

Total = £15.12
Serves 24 = 63p per portion


Start by mincing the garlic.


And chopping the onions.


Fry them in the same pan until they're soft then throw them into the slow cooker.


Dice the chillies and chuck them into the slow cooker too.


Dice the ginger as finely as you can, sling that into the slow cooker.


Next peel and chop the potatoes.


Roughly chop the peppers/


And chop the chicken into bite sized pieces.


Add the chopped tomatoes ( I couldn't get three tins of chopped tomatoes and used plum tomatoes instead, I should have chopped them up in the tin but forgot). 


Four chicken stock cubes.


Half a jar of cumin.


And half a jar of cayenne pepper.


Finally add a small jar of peanut butter.


Give it a stir and cook on low for 5 - 8 hours or on high for 4 - 6 hours if you're in a rush.  Do check that the chicken is cooked through if you're using the quicker cooking times.


Today we're having it served with boiled rice.  It would also make a fabulous topping for jacket potatoes or an accompaniment to home made chips.

Turkey Chilli - Slow Cooker Batch Cook Recipe


Deliciously flavoursome with a warming hint of chilli, this is a fabulous warm weather chilli recipe perfect for serving with jacket potatoes and salads.  It's packed with kid friendly veggies and super high in protein too.  Oh and it's only 43p per portion.


Ingredients and Tools:
 2kg Turkey Mince £7.56
1kg Sweet Potatoes 99p
1kg Onions 50p
Cannelloni Beans £1.05
Chopped Tomatoes 84p
Sweet Corn 65p
Tomato Puree 31p
Garlic 16p
Parsley
Cumin 25p
Chilli Powder 25p
Cayenne Pepper 25p

Total = £12.81
Makes 30 Portions = 43p per serving



Start by mincing (that means very finely chopping) the garlic.


Then chop the onions.


Pop them in a deep frying pan and add the spices.


Fry the onions and garlic in the dry spices, once they're nice and soft pop them in the slow cooker.


Use the same pan (saves on the washing up) to fry the mince until it's mostly brown.  Then chuck it into the slow cooker with the onions.


Next peel and chop the sweet potato.


Add them tot he slow cooker and add the frozen sweet corn (I need a bigger slow cooker - there is no bigger slow cooker . . . )


Next squeeze in three tins of cannelloni beans - disclaimer this slow cooker is totally overfilled, completely against the manufacturers recommendations.


Then pile on three tins of chopped tomatoes.


And a full tube of tomato puree.

Stir it VERY carefully!!

In all seriousness, overloading your slow cooker is not a good idea.  The contents will expand as it heat's up because science.  The water content will increase as the contents cook, because again science.  The resulting liquid will seep over the edge of the ceramic dish and onto the heating element below.  This will make a horrible greasy mess that you will have to deal with at some point, either straight away with a damp cloth (before leaving your slow cooker to dry out completely) or later using oven cleaner and extra strength marigolds.  It really doesn't do your slow cooker any good what so ever.  

But hey I'm human, maybe halving this recipe would have been a better idea but then that's extra effort and I don't normally do extra effort . . .   Unless of course you have a super extra large massive slow cooker - in which case where can I buy one!?!

Oh yeah, I forgot there was some parsley in there.  A really good sized handful chopped and popped in the slow cooker with the rest of the ingredients.  Buuut in my world my darn dog eat it, seriously I got home from the supermarket having bought the ingredients for this recipe to find that my dog had dug up and eaten my perfectly healthy parsley plant.  I grew that thing from seed last year and it survived the winter, it had even started to grow again, until the flaming dog got his jaws into it.  So yeah, that happened.
