Hamburger Pasta Sauce - Budget Batch Cook Freezer Recipe


I've been making a lot of "fake" junk food lately.  Vaguely healthy meals made to taste like Little Miss's favourite foods.  This is definitely one of the successes, pasta instead of burger buns along with plenty of tomatoes and beef mince which of course we refer to as "burger meat".  Little Miss was not impressed with the gherkins but they're my favourite part of a burger so she can pick them out and lump it.  


Ingredients and Tools:
1kg Mince Meat £2.98
1kg Onions 50p
Chopped Tomatoes 84p
Passata 32p
Garlic 16p
Paprika 30p
Beef Stock 12p
Gherkins 79p
Ketchup 15p

Total = £6.16
Makes 18 portions = 34p per serving

I started by mincing the garlic.


The dicing the onions.


They got slung into a large pan and once they were soft I added the mince.


Once the mince was mostly brown I added four stock cubes.


Half a jar of paprika, 


A tub of passata


And three tins of chopped tomoatoes.


A quick stir and it smells fantastic!

In order to create that hamburger taste I've added about a quarter of a bottle of ketchup.  I'd recommend adding a little and checking you're happy with the taste, you can always add more if you like.  A quarter of a bottle was a touch too sweet for me but I know that my smalls will prefer it sweeter.


Once the mince is cooked through and well mixed I chopped up a full jar of gherkins and added them.


Before portioning the mixture into freezer tubs.


I reheated the sauce and mixed it with cooked pasta.  Served with a generous topping of cheese this really does taste like a burger.  Little Miss and Little Dude both wolfed down their portions and asked if we can have this again next week.

Cottage Pie Recipe - Budget Batch Cook


Scrummy, filling comfort food that's super easy to cook, what could be better than a homemade cottage pie!?!  Homemade cottage pie that costs just 55p per person and comes out of your freezer ready for the oven - that's what!


Tools and Ingredients:
Mince £8.55
Onions 50p
Potatoes £1.00
Cheese £2
Butter 25p
Plain Flour 15p
Beef Stock 12p
Worcestershire Sauce 65p

Total = £13.22
Makes 24 portions = 55p per serving

Peel and chop the potatoes and pop them onto boil.


Dice the onions.


Put them in a large pan to fry.


Add the mince to the same pan.


Add four stock cubes.


And the bottle of Worcestershire sauce.


Then cover the mince mixture with flour.


Keep stiring it until the mince is browned.


Then half fill oven and freezer proof dishes with the mince mixture.


Once the potatoes are soft drain off the water.


Then add a generous dollop of butter.


And about 500g of grated cheese.

And mash it all together.


Spoon the mashed potato over the mince mixture and drag a fork over the top to make lots of lovley ridges that will brown in the oven.


Oven cook your pie for about 40 minutes, you'll know it's ready when it's piping hot thorughout and the top has those lovely crusty brown bits.


We like it with veggies or baked beans, today Little Miss requested both and I couldn't bring myself to tell a four year old she couldn't have more veg, so we had our cottage pie with broccoli, sweetcorn and baked beans.

Traditional Cornish Pasties - Batch Cook Recipe


My whole family loves these balanced meals in a handy little packet.  They're wonderfully portable and can heated up if a microwave is availible, but they're also nice cold.  At just 26p each they're a budget friendly lunch too.

I make my traditional Cornish pasties a little differently.  I cook the filling first, this means they take less time to cook and you can be sure that the filing is completely cooked before serving.


Ingredients and Tools:
1kg Mince £2.98
1kg Onions 50p
1kg Carrots 57p
Swede 47p
1800g Plain Flour 45p
800g Butter £1.25

Total £6.22 / 24 pasties = 26p each

Start by putting the mince into a large pan to fry.  


Chop up the onions.


Add them to the browned mince and fry.


Dice the swede and carrots.


Add them to the pan too.

Cook the filling on the hob until the vegetables are just barely cooked.

Let the filling cool completely before assembling the pasties.


Weigh out 1800g of flour.  


Add 800g of butter.


Use a dough hook to mix it well, adding a little water if necessary to combine the mixture to form a dough.


Roll out the pastry.


Cut out a circle of pastry, use a plate as a template.


Spoon some of the filling into the centre of the circle of pastry.


Then pull up the two sides of the pastry and press them together in the middle.

Brush the pasty with milk and / or egg before baking in the oven for about 20 minutes until golden brown.


Let them cool completely before freezing them.  You could freeze them in bags or in tubs.
