Rainbow Cake Recipe


This cake has been a learning experience.  Conclusion - cheap food colouring isn't worth it!  But hey, it tastes fab and Little Pickle is delighted with his first birthday cake so that's all that matters.

This cake is also enormous!!  I'll make it again but next time I'll halve the recipe.  There was far too much frosting too so that could do with being halved as well.  


Ingredients:
8 Eggs
Baking Powder 2 teaspoons
Self Raising Flour 450g
Caster Sugar 450g
Butter 850g
Icing Sugar 800g
Food Colouring
Flavourings
Milk



Start by greasing and lining 4 8 inch cake tins.


Next mix 112g of self raising flour, 112g butter, 112g caster sugar, 2 eggs, 1/2 teaspoon baking powder, food colouring and flavouring.


Beat until well combined.


Pour into one of the cake tins.


Repeat another 3 times.


Bake at 180 degrees centigrade for about 40 minutes.  A fork inserted into the centre of the cake should come out clean.  Allow to cool completely.


400g Butter and 800g icing sugar.


Beat well.


Turn out one cake onto a board.


Add frosting to the top.


Place a second cake on top.


Another layer of frosting.


And so on until you have four cakes.


Cover the whole thing with frosting.


And cover the top with 100s and 1000s.
