Delicious, moist sponge cake that just happens to be bright purple. Covered with sweet and sticky buttercream frosting - also purple.
Ingredients:
4 Eggs
1 Teaspoon Baking Powder
225g Self Raising Flour
225g Caster Sugar
425g Butter (225g for cake 200g for frosting)
400g Icing Sugar
Purple Food Colouring
Vanilla Flavouring
Grease and line two 10" cake tins.
Weigh out the flour, sugar, butter, eggs, baking powder, food colouring and flavouring.
Give it a good mix.
Divide the mixture evenly into the two cake tins.
Bake at 180 degrees centigrade for 40 minutes.
Leave them to cool on a wire rack.
Weight out 400g Icing Sugar and 200g Butter. Add some food colouring.
Beat thoroughly.
Cover the top of one cake in frosting and place the second cake directly on top of the first.
Cover the top and sides with frosting.
Set the frosting by putting the cake in the fridge.
