My Chicken Caesar Salad Recipe was utterly divine but it is a serious calorie fest, certainly not a healthy salad. I've changed the recipe and made a healthy version with more vegetables and a lot less calories. I won't claim that it tastes as good but the flavours are there and this one come's without a side order of guilt.
Tools and Ingredients:
Lettuce 49p
Peppers £1.15
Sweetcorn 37p
Cucumber 49p
Tomatoes 69p
Chicken £3.38
Light Mayonnaise 30p
Lemon Juice 17p
Dijon Mustard 18p
Anchovies £1.06
Garlic Powder 23p
New Potatoes £1.00
Total = £9.51
Makes 10 generous portions = 95p per portion

Start by chopping the new potatoes into bite sized chunks and putting them on to boil.
Shred the lettuce.
Dice the cucumber.
Chop the peppers.
And dice the tomatoes.
Mix all the vegetables together along with the sweetcorn.
To make the delicious dressing mince the anchovies.
Add about half a bottle of lemon juice.
And about half a jar of Dijon mustard.
Then add about half a bottle of mayonnaise. To keep the calorie count low I'm using low fat mayonnaise.
Finally add half a jar of garlic granuales.
Give it all a good stir.
And mix in the chicken breast pieces.
Drain the potatoes.
Store the salad, potatoes and Chicken Caesar separately to keep them fresh for longer. They should last for about 5 days in the fridge in sealed containers.
