Refreshingly different, this Quinoa Salad Recipe makes a great alternative to rice based dishes like my Easy Cajun Dirty Rice Recipe.
Ingredients and Tools:
Quinoa 99p
Chickpeas 33p
Cucumber 25p
Peppers £1.35
500g Red Onions 35p
Parsley
100ml Olive Oil 23p
Lemon Juice 17p
Cider Vinegar 49p
Garlic 16p
Total = £4.32
Makes 10 generous portions = 43p per portion

Start by boiling the quinoa according to the pack instructions.
Drain the tinned chick peas and pop them in a large tub.
Dice the onions and add them to the chick peas.
Dice and add the cucumber.
And the peppers.
Then add the cooked quinoa and give it a stir.
Now for the dressing, dice the garlic and pop it into a clean jam jar.
Add half a bottle of lemon jucie.
And about a much again of cider vinegar.
Then about 100ml of olive oil.
Chop the parsley and pop that in too.
