Cheese and Potato Pie - Batch Cook Freezer Recipe


This is hubster's favourite dish.  It's far from healthy but I make a batch for him once a year for his birthday.  A little bit of what you fancy does you good after all.


Tools and Ingredients:
1kg Cheese £3.99
500g Red Onions 35p
2kg Potatoes £1.00
1 Bulb Garlic 16p
Dijon Mustard 18p
900g Plain Flour 27p
400g Butter 46p

Total = £6.41
Makes 12 portions = 53p per portion

Peel and chop the potatoes.  Put them in water to boil.


Mince the garlic.


Dice the onions.


Fry them until soft.


To make the pastry mix 900g of plain flour with 400g of butter.


A mixer makes light work of this job but you can mix the dough by hand if you don't have a stand mixer.


Once the potatoes are thoroughly cooked drain the water away and add the fried onions and garlic.  

Add about half a jar of Dijon mustard.


Grate about 1kg of cheese.  

It looks and tastes great if you use two different colours of cheese.


Give the mixture a good stir and spoon it into oven proof dishes.


Divide the pastry by the number of dishes.


Roll it out and lay the pastry on top of the pie dishes.

Cut away the excess pastry.


I use the leftover bits of pastry to cut shapes from to decorate the tops of my pies.

Brush the pastry with a little milk or whisked egg to glaze it.

Cook the pies in the oven at about gas mark 4 for 30-40 minutes until the pastry is golden and the filling piping hot.
