I've been craving quiche lately so I dug out this old recipe which I haven't used in years. I was immediately reminded how much hubster loves it as it disappeared in one sitting. It's too much work for one meal for me to make it regularly but this was a one off holiday treat.
Ingredients:
100ml Milk
175g Plain Flour
100g Butter
200ml Cream
6 Eggs
250g Bacon
350g Cheese
Flour, butter, an egg yolk (save the white for later) and 100g of the cheese into a food mixer.
Mixed until it forms a dough.
Chill in the fridge for 30 minutes.
Meanwhile . . .
Chop 250g of bacon.
And fry
Until crispy.
Roll out the dough and place it over a 23cm (9 inch) flan dish.
Trim off the excess and chill for a further 15 minutes.
Now for the filling. The rest of the cheese, eggs, milk and cream
mixed with the crispy bacon.
Prick the pastry base.
And cover it with foil.
Pop some baking beans or raw rice inside.
Bake at 200oC for 10 minutes.
Remove the foil and beans.
Brush with egg white.
Cook at 200oC for a further 5 minutes.
Pour on the filling.
And bake for another 20 minutes.
Scrummy served with salad.
