This colourful fiesta rice recipe will liven up your lunchtime salad.
Tools and Ingredients:

Start by putting about 500g of rice into a pan of water and boiling.
While the rice is cooking finely chop the red onions.
And dice the chillies.
Then chop up the peppers.
And dice the tomatoes.
To make the dressing mix about 100ml of olive oil, half a jar of ground garlic, a really good sized pinch of cumin and about half a bottle of lemon juice. Taste the dressing as you're making it and adjust the quantities to suit your own preference.
Drain the rice and mix all of the ingredients together.
It can be served warm or cold and will last in the fridge for about five days if it's stored in a sealed container.
