Ham and Pineapple Couscous Salad - Budget Meal Prep Recipe


Light and fluffy couscous with all the flavours of a Hawaiian pizza.


Ingredients and Tools:
Ham £1.89
Pineapple 67p
Sweetcorn 37p
Peppers 65p
Red Onions 44p
Garlic 8p
Couscous 20p
Chicken Stock 6p
Fresh Herbs - parsley and chives from the garden

Total = £4.36
Makes about 10 portions, ideal for parties or meal prepping.

Start by mincing the garlic.


Pop the garlic in a pan with s little oil and add the red onions.

Fry them until soft.


Pop the couscous into a tub and add a couple of chicken stock cubes.


Pour over some boiling water so that the couscous is completely covered and then some.


Meanwhile add the diced peppers to the pan and fry them until they're softer but still firm (al-dente).


Dice the ham.

Mix together all of the ingredients, the couscous, ham, tinned pineapple, tinned sweetcorn and the contents of the frying pan.  Stir in the chopped herbs and serve warm.  Once the couscous has cooled down it can be stored in the fridge for almost a week.
