A spicy red meat recipe for this week. This can be made with stewing steak but a roasting joint is much cheaper.
Ingredients:
1kg Beef Roasting Joint
1kg Onions
1kg Sweet Potato
1kg Carrots
2 tins Coconut Milk
Beef Stock
Oil for frying
Curry Powder
Tumeric
All Sprice
Cardamon
Ground Cloves
Dice the beef - unless using pre-diced beef.
Fry until brown.
Add the spices.
Fry and add to the cooker.
Chop the onions.
And the chillies.
Fry until soft and add to the slow cooker.
Add four stock cubes.
And the coconut milk.
Peel and chop the carrots. Add them to the slow cooker.
Peel and chop the carrots and add to the slow cooker.
Add some flour to thicken the sauce.
Give it a good stir.
Cook for about 5 hours on low and severe with rice.
