This is one of our favourite dishes, it makes a really flavoursome chilli with a nice warming spicy aftertaste.
It's also super healthy, each portion of lean meat is paired with about 3 portions of veggies.
And cheap too this cost about 50p a portion.
My two year old has just scoffed the lot and asked for seconds. #parentingwin!!
- Turkey Mince 900g
- Sweet Potato 1kg
- Onions 1kg
- Cannelloni Beans
- Chopped Tomatoes
- Sweet Corn
- Tomato Puree
- Garlic
- Parsley
- Oil - for frying
- Cumin
- Chilli Powder
- Cayenne Pepper
Chop the onions.
And the garlic.
Add the oil and spices.
Fry until the onions are brown. Add to the slow cooker.
Fry the mince until just brown and add to the cooker.
Peel and chop the sweet potato, add it to the slow cooker.
Add the beans, tomatoes and tomato puree.
Then add the chopped parsley and give it a good stir.
Cook it on low for the day 6 - 8 hours.
Served with a jacket potato and garden salad.
