Pancake Day is a big deal in our house. Every year hubster cooks up a big batch of pancakes and serves them up with lashings of lemon juice and sugar. Scrummy but hardly a healthy option for Little Miss.
So here's another option that went down a treat;
Ingredients:
- Mince (Optional)
- Oil
- Cumin
- Ground Coriander
- Garlic
- Onions
- Chillies
- Random Leftover veggies
Chop and boil the spuds.
Finely chop the onions.
And fry them in a little oil with the garlic and spices.
Add the mince and fry.
Chop the chillies and assorted veggies.
Add to the pan.
Chuck in the boiled spuds.
Give it a bit of a mashing.
Then spread it on your pancake and roll.
